A price that is shorter now than when the bookmaker opened the market. Money, team news or a correction of an early mistake can all cause it; the drop itself only tells you the market changed its mind.
On 1X2 the outcome stays the same and its price changes. On handicap and totals markets the bookmaker often moves the line instead and keeps the price near evens, so a goal line going from 2.5 to 2.75 is the same kind of signal as an over price falling.
Opening price minus current price, divided by the opening price. 2.50 to 2.00 is a 20% drop. Only upcoming matches are listed; once a match kicks off it leaves the page.
